Tasty tasty margs...

Last night Elena and I cooked up a nice Mexican feast at home: chicken enchiladas, Mexican rice, refried black beans, salsa verde, guacamole, and margaritas. Duh. Because we all know that you can't do Mex without margs!

Here's my personal favorite margarita recipe, adapted from the quality "Fresca" marg at Las Palmas in Bucktown / Wicker Park. I even included a photo for reference.

My Favorite Margarita, Close-up

Shake the following well over ice, and serve "up" in your favorite glass:

  • 3oz premium tequila (reposado if you have it, silver if not)
  • 1.5oz Cointreau
  • Juice of one lime
  • A few dashes of West Indian Orange Bitters
  • Blue agave nectar (sweetener) to taste

Don't worry, not every night is this fancy or as well-photographed. Tonight is Mac n' Cheese with Three Floyds Alpha King. Still not half bad, though...
